Abstract
Ovaj rad opisuje različite hrvatske tradicijske slastice s posebnim osvrtom na slavonske savijače (štrudle). Cilj rada je proučiti slavonske savijače, zatim prirediti po tradicionalnom receptu, te ju na tri različita načina osuvremeniti. Priređene savijače su senzorske ocijenjene. Utvrđeno je da priprema savijača utječe na njihov oblik, okus, teksturu, hrskavost odnosno skupnim nazivom senzorske karakteristike. Različita temperatura može utjecati na okus i hrskavost, drugačije oblikovanje savijače može utjecati na senzorske karakteristike te također drugačiji način rezanja ili ribanja jabuka može doista utjecati na teksturu, a pri tome i na okus i oblik savijače.
Abstract (english)
This paper describes various traditional Croatian sweets with special reference to Slavonian strudels. The aim of the work is to study the Slavonian strudel, then to prepare them according to the traditional recipe, and to modernize it in three different ways. The prepared strudels are sensory evaluated. It has been established that the preparation of strudels affects their shape, taste, texture, crispness, or, collectively, sensory characteristics. A different temperature can affect the taste and crispness, a different shape of the strudel can affect the sensory characteristics, and also a different way of cutting or grating the apples can really affect the texture, and also the taste and shape of the strudel.
